Kids' burgers with bacon mayo

The finale of the evening belongs to the kids: sturdy beef burgers on a soft bun, with bacon mayo or a fresh pickle relish. The hot sauce sits next to the plate, not on it — so the smallest eater leaves just as happy as the biggest.

Kids' burger with fresh pickle relish on a plate

Ingredients (10 burgers)

  • 1 kg ground beef
  • 6 shallots, finely chopped
  • 4 tsp Worcestershire sauce
  • Salt and black pepper
  • 10 soft buns
  • Bacon mayonnaise (see basics)
  • Lettuce, tomato and pickle

Method

  1. Loosely mix the beef with the shallot, Worcestershire sauce, salt and pepper — don't knead it into a paste.
  2. Shape 10 burgers and let them firm up in the fridge for 30 to 60 minutes.
  3. Grill on the direct zone: three to four minutes per side, flipping once.
  4. Toast the buns briefly and build with bacon mayo, lettuce, tomato and pickle.

Tip from the guru

Never press the burger down with your spatula — you want those juices in the bun, not in the coals.
