Stuffed tomatoes from the grill

Firm tomatoes, packed with a green filling of herbs, garlic and aged cheese, in cast iron next to the coals. Vegetarian, colourful and surprisingly smoky.

Stuffed tomatoes in a cast-iron pan on the barbecue

Ingredients (serves 20)

  • 20 firm vine tomatoes
  • 200 g aged cheese, grated
  • 100 g breadcrumbs from grilled baguette
  • Large bunch of parsley and basil, finely chopped
  • 4 cloves of garlic, crushed
  • Olive oil, salt and pepper

Method

  1. Cut a lid off the tomatoes and carefully scoop them out.
  2. Mix the cheese, breadcrumbs, herbs, garlic and a dash of olive oil into a coarse filling.
  3. Stuff the tomatoes generously and pack them snugly together in a cast-iron pan.
  4. Set the pan on the indirect zone and cook for 12 to 15 minutes, until the filling is golden brown.

Pick tomatoes that are just shy of ripe — they hold their shape on the fire and stay standing upright.
