Grilled pineapple with lime

The dessert that fits on the grate: slices of pineapple, caramelised over the dying coals, with lime and a pinch of sea salt. Simple, and gone every single time.

Ingredients (serves 20)

  • 2 ripe pineapples, peeled and cut into slices a good centimetre thick
  • 2 limes
  • 2 tbsp cane sugar
  • Pinch of coarse sea salt
  • Optional: vanilla ice cream on the side

Method

  1. Grill the slices on the clean grate over the dying coals, two to three minutes per side.
  2. After flipping, sprinkle thinly with cane sugar so it caramelises.
  3. Grate lime zest over the top, squeeze over the lime juice and finish with a pinch of sea salt.
  4. Serve warm, with or without a scoop of vanilla ice cream.
