The BigBBQ Burger
Our signature recipe, once promised on Instagram and delivered here: the BigBBQ Burger. Two thin patties with double cheese, pickle, onion and our own burger sauce, stacked on a soft sesame bun — the classic, but over charcoal.

Ingredients (10 double burgers)
- 1.4 kg ground beef (around 20% fat), loosely rolled into 20 balls
- 20 slices of cheddar
- 10 sesame buns, plus 10 extra middle slices
- Burger sauce: mayonnaise, ketchup, finely chopped pickle, onion powder and a splash of vinegar
- Chopped onion, pickle slices and shredded iceberg lettuce
Method
- Heat a cast-iron plate on the direct zone until it's just smoking.
- Smash each ball flat in one go into a thin patty with ragged edges and salt it straight away.
- Flip after a minute and a half, lay the cheese on top and give it one more minute.
- Build it: bun, sauce, lettuce, onion, patty, middle slice, then once more — pickle to crown it.
Tip from the guru
Press only once, right after the ball hits the plate — pressing after that costs you juices, and those ragged edges are exactly where the flavour lives.
